Mimi's Cheese Wafers

 

13 oz. grated Extra Sharp Cheddar Cheese
3 sticks butter, softened
3 cups plain flour
1 tsp baking powder
1 tsp salt
1 T cayenne pepper (or 1 tsp if you prefer less heat!)
Optional: pecan pieces

Cream together cheese and softened butter.  Sift together flour, baking powder, salt, and cayenne pepper.

Mix creamed ingredients and sifted ingredients together well and roll in long nickel-sized rolls on waxed paper.  Refrigerate until firm.  Cut into slices and make a criss-cross on the top with a cold fork.  If desired, place pecan pieces on top.

Bake at 350 degrees F for 15 minues.  Remove from pan when done.  Let cool.

Layer waxed paper, paper towel, and cheese wafers.  Repeat layers and leave overnight for extra oil to be absorbed onto paper towel.  Store in airtight containers.  May freeze.
*Place unbaked batches on a cold pan.
