1 can black beans
2 cans black-eyed peas
1 can white corn
1 can hominy
1 can Rotel Tomatoes with Green Chiles (pour juice off)
1 can chopped green chiles
1 med. purple onion, chopped
1 med. tomato, chopped
1 med. bell pepper, chopped
5 green onions, sliced
1 cup fresh cilantro, chopped - or - 1 T dried cilantro
2 cloves garlic
16 oz. Italian salad dressing (Kraft's Zesty Italian works best)
Drain, rinse, and combine beans, peas, corn, and hominy in a large bowl
Add can of tomatoes, chopped green chiles, chopped onions (purple and green), chopped tomato, chopped bell pepper, cilantro, garlic, and Italian salad dressing.
Mix all ingredients together and chill to combine flavors. Serve with a variety of crackers. Refrigerate leftovers - if you have any! |
