Spooky Spiced Nuts

Vegetable Cooking Spray
2 egg whites
2 cups roasted & salted almonds
2 cups roasted & salted cashews
2 cups walnut halves
3/4 cup sugar
1 T curry powder (or more if you really love curry!)
1 T ground cumin
2 1/2 tsp garlic salt
1 1/4 tsp cayenne pepper
1/2 tsp ground cinnamon

Place an oven rack in the center of the oven.  Preheat oven to 250 degrees F.  Spray a baking sheet, liberally, with cooking spray.  Set aside.

In a large bowl, whisk egg whites until frothy.  Add all nuts & stir until coated.  In a small bowl, combine the sugar & all spices.  Sprinkle the mixture over the nuts & toss until coated.  Arrange the nuts in a single layer on the baking sheet.  Bake for 45 minutes until golden & fragrant.  Cool for 1 hour.  **Because oven temperatures vary slightly, be sure & watch the nuts to make sure they do not burn!**

Using a metal spatula, remove the nuts from the baking sheet.  Break any clusters into bite-sized pieces & place in serving bowls.  Nuts can be made days ahead of time & stored in air-tight containers.  Freezing is not recommended.

Makes 6 cups.
